Chocolate Mousse (For filling)

Chocolate mousse (Good for Cake filling)

200g      Dark chocolate
50g         Hot coffee
1 Tsp       Vanilla Extract
140g       Egg Whites
10g          Granulated sugar
Pinch      Cream of tartar
200g       whipping cream

Whip the egg white, sugar and cream of tartar until medium peak. Transfer to a bowl.

Whip cream to a medium peak.

Place chocolate in a bowl and melt over a pan of boiling water. Then add hot coffee in and mix vigorously with hand whisk. Add vanilla extract.

When the chocolate is warm, FOLD egg whites, then whipped cream.

Keep in a fridge.
