Chocolate Cookies

When I make these cookies I bake half and freeze the other half. Take out of the freezer 30 minutes before baking. Lay on a lined tray and bake as recipe.
Chocolate chip cookies (20-22 pieces)


Ingredients:
150g          Soft butter
140g          Light brown sugar
70g            Caster sugar
1 Tsp          Vanilla extract
‘1                  Egg yolk
‘1                  Egg
300g         Plain flour, sifted
1/2 Tsp      Baking soda
pinch          Salt
150g          Milk chocolate chips

Method:
Beat the butter, light brown sugar and caster sugar and mix until pale using a paddle attachment. Beat about 5 minutes.

Add the eggs and vanilla, mix well.

Add the flour, baking soda and salt, mix for aprox 1 minute. Add the chocolate chips and mix well.

Divide the dough into 20-22 balls and place on a greased baking tray and chill for 30 minutes. (you can freeze at this stage).

Bake at 160C for 10-12 minutes. Leave on a try until cooled completely.
