Black Eye Peas Stew

Black Eye Beans Stew   ( for 6 serve)
Ingredients: A
250g         Black eyes beans
1000L     Water
250g        Stewing beef cut into cubes
100g         Onion chopped


Ingredients: B
1 Tbsp.          Stock
‘1 Tbsp.         Ginger, grated
‘1 clove         Garlic, grated
‘1/2 Tsp        Coriander powder
‘1 Tsp             Salt flakes
¼ Tsp            Chilli flakes
1/2 Tin           Chopped tin tomato

2 Tbsp            Coconut cream grated
‘1/2 Tsp           Brown sugar
Garnish:
Coriander leaves

Method:
Soak the beans overnight.

Place ingredients A into a pressure cooker and cook until soft.

Add ingredients B and simmer for 20 minutes. Add water if required.

Add the grated coconut cream and sugar, simmer for further 15 minutes.

Garnish with coriander leaves.
